Spéculoos

March 18, 2013 Photo of the day: "Spéculoos"

I was thrilled to find spéculoos cookies in my local grocery store this weekend. I always enjoy them when I'm in Europe. Spéculoos by Lotus are spice cookies that seem to be a cross between gingerbread cookies and graham crackers. They are subtly spicy; a combination of cinnamon, nutmeg, cloves, ginger, cardamom, and white pepper. They kind of remind me of the Dutch Windmill cookies from the Rippin' Good Cookie Company that I loved when I was little. How fun to find them here! Although, I wonder if they will be as much of a treat now that I can get them locally. One thing that I haven't found here is the amazingly decadent spéculoos spread. Similar to peanut butter, but with the spiced cookie flavor, it is delicious on a baguette or a crepe. I think I'll have to bring a jar home with me next time!
